CARAMEL APPLE PIE BARS WITH CINNAMON PECAN STREUSEL

These easy apple pie bars have a shortbread crust, rich apple layer, and a cinnamon pecan streusel topping. Drizzle with caramel for a classic treat!

INGREDIENTS

  • SHORTBREAD:
  • 1/2 cup butter melted
  • 1/4 cup light brown sugar packed
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 cup all-purpose flour
  • APPLE LAYER:
  • 2 slices large Granny Smith apples peeled and sliced into 1/4″ thick
  • 2 1/2 Tbsp butter
  • 2 Tbsp light brown sugar
  • 1 1/2 Tbsp all-purpose flour
  • 1/2 tsp ground cinnamon
  • CINNAMON PECAN STREUSEL:
  • 3/4 cup all-purpose flour
  • 1/2 cup old-fashioned oats divided
  • 1/4 cup light brown sugar
  • 1/4 tsp ground cinnamon
  • 1/2 cup cold butter cubed
  • 1/2 cup pecans chopped

INSTRUCTIONS

  1. Preheat oven to 300 degrees F.
  2. Line an 8″x8″ baking pan with parchment paper and set aside.
  3. Melt butter in microwave, then add brown sugar and whisk to combine.
  4. Add salt and cinnamon, stir, then add flour and stir until well combined.
  5. Press dough into prepared pan in an even layer.
  6. Bake 15 minutes, then set aside.
  7. Increase oven temperature to 350 degrees F.
  8. While crust is baking, prepare apples and add to medium mixing bowl.
  9. Toss apple slices with butter, brown sugar, flour and cinnamon.
  10. Add flour, 1/4 cup oats, brown sugar and cinnamon to a food processor. Add cubes of cold butter and pulse until butter is cut into mixture and pea sized pieces form.
  11. Add streusel to a small bowl and stir in chopped pecans and remaining 1/4 cup oats.
  12. Layer apple slices over top of the shortbread crust, then top with streusel topping.
  13. Bake at 350 degrees F for 20-25 minutes, until streusel is lightly golden brown and apples are cooked through.
  14. Drizzle with caramel and top with vanilla ice cream if desired.
